Ingredients

Scale

Dry Ingredients:

  • 1 ½ cups (190 grams) all-purpose flour
  • 2 cups (180 grams) old-fashioned whole rolled oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt

Wet Ingredients:

  • 1 cup (227 grams) unsalted butter, softened
  • 1 cup (250 grams) creamy peanut butter
  • 1 large egg
  • 1 egg yolk
  • 1 teaspoon vanilla extract

Sweet Ingredients:

  • ¾ cup (150 grams) granulated sugar
  • ¾ cup (165 grams) golden brown sugar, packed
  • 2 cups (340 grams) semi-sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. Sift the flour, baking powder, baking soda, and salt together in a medium mixing bowl and set aside.
  3. In a separate large bowl, cream the softened butter, granulated sugar, and golden brown sugar using an electric mixer on medium-high speed for approximately 1 minute until light and fluffy.
  4. Incorporate the whole egg, additional egg yolk, and vanilla extract into the butter mixture, beating until thoroughly combined.
  5. Blend in the creamy peanut butter at high speed, ensuring complete integration.
  6. Gently fold the sifted dry ingredients into the wet mixture using a spatula, mixing until no flour streaks remain.
  7. Carefully fold in the rolled oats and chocolate chips, distributing them evenly throughout the cookie dough.
  8. Using a medium-sized cookie scoop, portion out the dough onto the prepared baking sheet, optionally rolling each portion between your palms for a more uniform shape.
  9. Enhance the appearance by pressing additional chocolate chips onto the top of each cookie dough mound.
  10. Position the baking sheet on the center rack and bake for 10 to 12 minutes, or until the cookie edges turn a light golden brown.
  11. Allow the cookies to rest on the baking sheet for 3 to 4 minutes to set, then transfer to a wire cooling rack to cool completely.

Notes

  • Soft and chewy texture guaranteed by using a combination of butter, egg yolk, and creamy peanut butter.
  • Ensure ingredients are at room temperature for better mixing and smoother cookie dough consistency.
  • Sifting dry ingredients prevents lumps and helps create a more uniform cookie texture.
  • Resist overbaking to maintain the signature soft center and crisp edges.
  • Extra chocolate chips on top create a bakery-style look and add bursts of chocolate flavor.
  • Store in an airtight container for up to 5 days to keep cookies fresh and deliciously soft.
