Instructions

  1. Warm the oven to 350°F (176°C). Prepare two 8-inch round cake pans by greasing and lining with parchment paper. Thoroughly blend softened butter and granulated sugar until achieving a pale, airy consistency.
  2. Gradually add eggs into the butter mixture, incorporating one at a time. Mix coffee extract and a tablespoon of flour with each egg addition to prevent curdling. Gently fold remaining all-purpose flour, baking powder, and finely chopped pecans into the batter until evenly distributed.
  3. Carefully divide the cake batter between prepared pans, smoothing surfaces with a spatula for even baking. Place in preheated oven and bake for 22-27 minutes until cakes are golden and spring back when lightly touched. Remove and allow to rest in pans for 10 minutes before transferring to a wire cooling rack.
  4. Create pecan brittle by spreading granulated sugar and of water in a heavy skillet. Heat without stirring until sugar caramelizes to a rich golden brown. Quickly add whole pecans, stirring to coat, then immediately pour onto a silicone mat or greased baking sheet to cool and harden.
