Ingredients
Scale
Main Proteins:
- 400 grams (14.11 ounces) chicken tenders
- 1 clove garlic, minced
Pasta and Primary Ingredients:
- 350 grams (12.35 ounces) dry farfalle pasta
- 180 milliliters (6.08 fluid ounces) coconut milk
- 180 milliliters (6.08 fluid ounces) light semi-thick cream, 4% fat
- 1 small red onion, finely chopped
Seasonings and Flavor Enhancers:
- 2 tablespoons olive oil
- 2 tablespoons lime juice
- 1 pinch salt
- 2 pinches black pepper
- 2 heaping teaspoons curry powder
- 1 teaspoon dried coriander or a few sprigs of fresh coriander, leaves picked
Instructions
- Prepare chicken tenders by slicing into bite-sized pieces, then combine with olive oil, fresh lime juice, curry powder, salt, and black pepper. Thoroughly coat the chicken and allow to marinate for 5 minutes at room temperature.
- Fill a large pot with water and bring to a rolling boil over high heat.
- Activate a multi-cooker’s high sauté function and pour olive oil. Add finely chopped red onion and minced garlic, sautéing for approximately 2 minutes until the onions become translucent and fragrant.
- Transfer the marinated chicken and fresh chopped coriander into the multi-cooker. Stir continuously and cook until the chicken is fully done and no longer pink in the center, roughly 1-2 minutes.
- Generously season the boiling water with coarse salt, then add pasta and cook according to package instructions until al dente.
- Carefully drain the cooked pasta using a colander, shaking to remove excess water.
- Switch the multi-cooker to warming mode and return the cooked pasta to the pot. Pour in full-fat coconut milk and stir thoroughly to combine.
- Add heavy cream and gently mix until the pasta becomes luxuriously creamy and evenly coated with the sauce.
Notes
- Marinating chicken with lime juice and curry powder enhances the depth of flavor and helps tenderize the meat.
- Use fresh garlic and red onion for a robust base that adds aromatic complexity to the dish.
- Quick cooking prevents chicken from becoming tough, ensuring juicy and tender protein.
- Coconut milk creates a luxurious, creamy sauce that complements the curry’s warm spices.
- Reserve some pasta water as a backup to adjust sauce consistency if needed.
- Multi-cooker allows for efficient one-pot meal preparation, minimizing kitchen cleanup.
