Creamy New York-style cheesecake nestles atop a chocolate chip cookie dough base, creating a luxurious dessert that marries two beloved treats. Indulgent layers promise pure bliss with each rich, silky bite you’ll savor.

Ingredients

Scale
  • 24 oz (680 g) cream cheese, room temperature
  • 1 ½ cups (188 g) all-purpose flour
  • 1 cup (170 g) semi-sweet chocolate chips
  • ¾ cup (150 g) white granulated sugar
  • ½ cup (120 g) sour cream, room temperature
  • ½ cup (100 g) brown sugar, packed light or dark
  • ½ cup (100 g) white granulated sugar
  • ½ cup (120 mL) heavy whipping cream
  • ½ cup (85 g) mini chocolate chips
  • ½ cup (113 g) unsalted butter, room temperature
  • ¼ cup (60 mL) heavy whipping cream, room temperature
  • 3 large eggs, room temperature
  • 3 tbsps milk
  • 2 tbsps powdered sugar
  • 1 large egg, room temperature
  • 1 tsp pure vanilla extract
  • ½ tsp pure vanilla extract
  • ½ tsp salt
  • ½ tsp baking soda
  • cookie dough balls

Instructions

  1. Prepare Crust: Sift dry ingredients and cream butter with sugars until light and fluffy. Blend vanilla and egg into the mixture, then gently fold in flour and chocolate chips. Press dough evenly into a springform pan and bake until golden.
  2. Create Edible Cookie Dough: Whisk flour and salt, then cream butter and sugars to a cloudlike consistency. Add vanilla and milk, then fold in dry ingredients and chocolate chips. Form small dough balls and chill to maintain shape.
  3. Make Cheesecake Base: Reduce oven temperature. Blend cream cheese and sugar until velvety smooth. Incorporate vanilla, sour cream, and heavy cream. Add eggs one at a time, then fold in mini chocolate chips and frozen cookie dough balls.
  4. Bake and Finish: Place cheesecake in a water bath and bake until set. Prepare ganache by heating cream and pouring over chocolate chips, stirring until glossy. Whip heavy cream with powdered sugar and vanilla until stiff.
  5. Assemble and Decorate: Cool cheesecake completely, then drape with ganache and pipe cream rosettes. Garnish with reserved cookie dough balls and mini chocolate chips for a decadent presentation.

Notes

  • Flour Safety First: Always heat-treat flour to eliminate potential bacteria, ensuring a safe edible cookie dough experience.
  • Chill for Success: Refrigerate cookie dough balls before adding to cheesecake to prevent melting and maintain distinct texture.
  • Water Bath Wisdom: Use a water bath to create gentle, even heat distribution, preventing cracks and ensuring a smooth cheesecake surface.
  • Ganache Perfection: Allow ganache to cool slightly before pouring to achieve the ideal dripping consistency and glossy finish.
