Instructions

  1. Prepare the roasted garlic by preheating the oven to 400°F (204°C).
  2. Trim the top of the garlic heads, removing any loose outer leaves.
  3. Place the garlic heads on a piece of aluminum foil and generously drizzle with of olive oil.
  4. Completely enclose the garlic in the foil, creating a sealed packet.
  5. Roast the garlic in the preheated oven for 45 minutes until soft and caramelized.
  6. Allow the roasted garlic to cool completely, then gently squeeze the cloves out of their papery skin.
  7. Mash the roasted garlic cloves and combine with of olive oil in a small mixing bowl.
  8. Peel and cut potatoes into quarters, ensuring uniform size for even cooking.
  9. Transfer potato quarters to a large pot and cover with cold water, ensuring 1-2 inches (2.5-5 centimeters) of water above the potatoes.
  10. Bring the water to a rolling boil over high heat and cook for 15-20 minutes until potatoes are fork-tender.
  11. Thoroughly drain the potatoes and return them to the pot.
  12. Mash the potatoes using a potato masher or ricer until smooth.
  13. In the same pot, warm the heavy cream over low heat.
  14. Fold in the mashed potatoes, grated Parmesan cheese, butter, and salt.
  15. Stir the mixture gently over low-medium heat for approximately 5 minutes.
  16. Sprinkle fresh thyme leaves and freshly ground black pepper over the potatoes.
  17. Taste and adjust seasoning as needed, adding more salt if required.
