Description

Savory mini omelets deliver delightful brunch perfection with compact egg parcels packed with cheese and herbs. Mediterranean-inspired ingredients create compact flavor bombs that guests will devour in delicious, bite-sized portions.

Ingredients

Scale

Main Protein:

  • 10 large eggs
  • 1 cup (8 ounces) breakfast sausage

Starches & Base:

  • 36 tater tots
  • ¼ cup (2 fluid ounces) milk

Flavor Enhancers:

  • ½ cup shredded cheese
  • ½ bell pepper, diced
  • Seasoning to taste

Instructions

  1. Warm the oven to 400 degrees and thoroughly coat a standard muffin pan with cooking spray to prevent sticking.
  2. Microwave frozen tater tots until softened, then place 3 tots into each muffin cavity.
  3. Compress the tots using the bottom of a small cup, creating a compact base for the mini omelets.
  4. Bake the pressed tots for 10 minutes to create a crispy foundation.
  5. Reduce oven temperature to 350 degrees after removing the tots.
  6. Prepare protein by microwaving and dicing sausage links into small pieces.
  7. Chop pre-diced bell peppers and distribute them evenly across the muffin cups.
  8. Combine eggs, milk, and preferred seasonings in a mixing bowl, whisking until thoroughly blended.
  9. Carefully pour the egg mixture into each muffin cup, filling approximately 90% to allow room for expansion during baking.
  10. Generously sprinkle shredded cheese over the top of each mini omelet.
  11. Bake for 20 minutes or until eggs are completely set and cheese is melted and slightly golden.
  12. Remove from oven and let cool for a few minutes before carefully extracting the mini omelets from the pan.
